Like the Deidara and Sasuke fight, we didn't know that Sasuke's lighting element techniques had been defusing Deidara's bombs. We also didn't know that he had purposely tossed his sword into the ground to check if he could disarm one of Deidara's mines. Same when Kakashi took some blood from Kakuzu, we saw Kakashi's hand in a suspicious position, but we didn't know what it really was until it was revealed later.
Many, many more examples. For example, a lot of people still believe that Itachi's hand seals were way too fast for Kakashi and Kurenai's eyes to keep up with 
What really happened was that the Kage Bunshin, which would later explode, was serving as a distraction, while the TRUE Itachi used a water technique from elsewhere close by to attack Kakashi's legs. Kakashi, only seeing one Itachi at the time, assumed that he must have used seals at such an incredible speed that his eyes couldn't even notice it.
Kurenai was equally shocked when she thought the very same Itachi that was right in front of her used a Kage Bunshin technique so quickly, but in reality the Kage Bunshin technique by Itachi was performed well before that Kage Bunshin of Itachi's ever pulled the shuriken in hand feint.
The unreal speed of Itachi's seals were nothing more than a realistic illusion created by the fact that they didn't know the Itachi who pulled that Shuriken in hand fake out, wasn't the real Itachi from the start, and also wasn't the same one that used the water technique to attack Kakashi. The real Itachi revealed himself later when he stabbed a Kakashi water clone in the back with his kunai. Mystery solved, eh?
